EVIT adds new Culinary Arts course options

East Valley students can specialize in Culinary Arts, Commercial Baking & Pastry or Hospitality Management

The Culinary department at the East Valley Institute of Technology in Mesa will offer students new options for advanced career training and credentials in the 2018-19 school year.


The first option is a two-year Culinary Arts program. In the first year, students develop skills for food preparation, food production and service in a commercial kitchen while preparing to earn national certification as a Serve Safe Food Service Manager.

East Valley high school students who have already completed a Culinary Arts program at their high school may be eligible to enroll directly into the second year of EVIT’s program where they can specialize in one of three areas: Baking and Pastry, Advanced Culinary Cuisine, or Hospitality Management.

The second year covers advanced applications in commercial kitchen equipment, organization and operations, sanitation, quality control, quantity food preparation and food preparation skills. It prepares students to earn national certification as a Certified Fundamentals Cook through the American Culinary Federation.

The two-year Culinary Arts program includes the opportunity to earn dual enrollment college credit through Scottsdale Community College and Central Arizona College.


The second option, Commercial Baking and Pastry, is a one- to two-year program that focuses on chocolate confections, tarts, breads, plated desserts, cake decorating, pastries, plate painting, individual desserts and Viennoiseries. Baking and Pastry training prepares students to earn national certification as a U.S. Department of Labor-recognized ACF Certified Fundamentals Pastry Cook. College credit is available through SCC and CAC.


The third option, Hospitality Management, is a one-year program that teaches students the principles of operations in the travel and tourism industries, hotel and lodging facilities, food services, recreation, hospitality planning and business operations. Students in this program are prepared to earn three national certifications: Certified Guest Service Professional, Certified Front Desk Representative and Certified Restaurant Server.


Additional EVIT options for adult students are in development, including a Certified Dietary Manager program, Food Truck and Catering Entrepreneurship, Sustainability in Culinary Operations, and new classes for baking enthusiasts.

EVIT Culinary and Baking programs are the only high school programs in Arizona that are certified by the American Culinary Foundation. Students get the opportunity to work in a commercial kitchen and serve banquets at EVIT’s Dr. A. Keith Crandell (Main) Campus, and to work at Bistro 13, a restaurant operated by the Culinary program. Externships with Valley restaurants are also available.

Culinary is one of over 40 career training programs offered tuition-free to high school students and tuition-based to adults at EVIT. Financial aid is available for adult students who qualify.
